My Favorite Vegan Breakfast

I'm a Mexican food freak!  I'd eat Mexican food every day, twice a day, maybe more, if it were always up to me!  If you can wrap it in a tortilla and another it in salsa, I'm happy!



I'm thrilled to have found vegan alternatives for breakfast burritos!  Here's what I did...

Chopped up firm tofu and put in a skillet with coconut oil. 
Added chopped or slices veggies.  This time that included 
red and green peppers
tomatoes
mushrooms
red onion
spinach

Added some fresh cracked pepper and kept stirring until the tofu slightly darkened in color and all the veggies were cooked to desire texture. 

Scooped some of the fixins onto a whole wheat tortilla. 

Topped it all with green pepper Tabasco and chunky salsa and YUM!!!!!

Enchilada Casserole

I saw this recipe on Facebook posted by the Forks Over Knives page.  It was delicious!  Super easy to make and it was yummy!  I could eat this every day!  My husband and I finished the entire dish.  ;)
